Herbal vinegar
  • Apple cider vinegar or other vinegar of your choice
  • fresh or dried herbs or spices of your choice
If using fresh herbs: Rinse well in water, pat with a kitchen towel and leave to dry until there is no water left. 
In a glass jar or bottle, add spices and herbs to the bottom, and pour vinegar over them. Shake the bottle and make sure nothing is sticking out. Leave to stand for 24 hours, then it’s ready to use. You can top up with more vinegar as you use it – if the herbs always are covered with vinegar the bottle will last several months. Alternatively, strain the vinegar after about two weeks. Use in hair rinses, in salad dressing or in any recipe that calls for vinegar.
